Smoked Salmon and Ricotta Croustades


These little beauties are great for 3 reasons;
1. They look great
2. They taste even better
3. So quick to make

If you're going to a dinner party, have a busy day beforehand, Croustades are your godsend!
You can fill them with any tasty combination you'd like. Let your imagination run wild



Smoked salmon and cream cheese is a classic combination, however I felt like a change. I felt like having it with something lighter. Ricotta is a great alternative in this case as it allows for a creamy yet airy texture while leaving room for the other combined flavours

This is what I put together

24 croustades
1/2 cup BBQ smoked salmon, shredded
1 tbsp fresh chives, chopped
3/4 cup ricotta cheese
2 tsp wholegrain mustard
Juice from 1/4 of a lemon
Salt & pepper to taste

Instructions:
- In a bowl, combine the ricotta, lemon juice and mustard. Add salt and pepper to taste
- Fill each croustades about halfway with the ricotta mixture
- Top with a few chunks of the salmon and some chives

TIP: It's best to fill the croustades just before serving to keep the crunch
