Muesli Cookies

I love baking cookies! The prepping is so simple and takes minutes! Honest. It took me about 5 minutes to make the cookie dough! The excitement began to build...I drop spoonfuls of dough onto the cookie she....and who can resist eating some of the cookie dough as you go? I certainly can't! This process takes me about 5 minutes (ok, maybe closer to 10 if I include dough munching time). " batches through the oven, each taking 15 minutes.
This gives home made cookies in under and hour! Can anyone tell me if they've ever had store bought cookies that are better than home made?..... Anyone? ...Anyone?....I thought not :)


3/4 cup butter (room temperature)
1 cup brown sugar
2 medium eggs
2 tsp vanilla extract
3/4 cup all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
3 cups organic muesli (choose one with no added sugar)
1 cup dried cranberries
1 cup desiccated coconut

Instructions:
- In a large bowl cream butter and sugar together until smooth. Add eggs and vanilla, mixing until all combined
- In a separate bowl combine flour, salt, baking soda and cinnamon. Sift flour mixture into the butter mixture and beat in until all combined
- Stir in the muesli, coconut and cranberries
- Line 2 baking sheets with parchment paper and set oven to 350 F (gas mark 4)
- Drop small spoonful size pieces of dough, each about 1 inch apart (or for large cookies, drop large spoonful size piece of dough, each about 2 inches apart).
- Bake for 12-15 minutes, or until golden brown. When cookies first come out of the oven they will be very soft to touch. Allow to cool for 5 minutes and they will then be firm enough to transfer onto a wire rack to cool for a bit longer....but by all means get yourself a glass of milk and eat one or town while still fresh out of the oven! yummm!!

Makes 3 dozen small or about 2 dozen larger cookies

Hi Monique! So how did your cookies turn out with using baking powder instead of baking soda. I have read that baking soda can be used in replacement of baking powder along with some cornstarch and cream of tarta. But it doesn't work the other way around. So I'm curious how the cookies turned out.
I'm really happy your trying the recipes from my blog! :)) And experimenting further is always good :))

They are in the oven as we speak, I didn't have all the ingredients to make them that night, but I still couldn't find baking soda in the store..Maybe it was my bad portuguese? I'll let you know how they turn out!

In the UK it's called bicarbonate of soda. Try to translate that into portuguese, maybe it will make a difference ???
